Saute Express Chicken with Mixed Veggies!!!

This meal is light and full of flavor!!!

Serving Size for 2 People
Ingredients:
Boneless Skinless Chicken Steak (1 per person)
Saute Express of your choice (my fav is Italian Herb)
Green Bell Peppers (1)
Red Bell Peppers (1)
Zucchini (1)
Onions(1/2)

Optional : any other veggies that you might like to mix in with all these, as well you an add black beans to this meal!!!





Directions:
Take a pan and place on stove, turn stove on to med heat add the one saute stick to the middle of the pan and let melt on medium heat while spreading the butter all over the pan. Once saute is melted at the chicken and cook on medium heat till chicken is cook all the way through. Depending on stove it could take up to 15 min at the most. While chicken is cooking go ahead and peel slice and cut up your veggies into little pieces so you can place them in the pan once chicken is done. Make sure you wash all veggies before cutting. Once chicken is done take out and set on a plate and leave in microwave to keep warm while veggies are cooking. Place all your veggies in the pan and mix and cook till the veggies are nice and soft. Cooking them in the pan where the chicken was cooking adds a little flavor from the saute to your veggies!!!.
If you chose to add black beans go ahead and heat them in another pan on the stove top and heat till bubbles!!!

Place a portion of veggies the size of your fist and your black beans the size of your fist on your plate with your chicken and enjoy!!!

Greed Stuffed Peppers

Greek Stuffed Peppers 
Serves 3-4
Ingredients:
• 6 large or 8 small bell peppers
• 1 large onion, diced
• 3 small zucchini, peeled and diced
• 3 medium carrots, peeled and diced
• 1 cup low-sodium vegetable broth
• 3 cups cooked brown rice
• 5 tablespoons tomato paste
• ¾ cup fresh parsley, chopped
• ¾ cup fresh dill, chopped
• 1 lemon, juiced
• ¼ teaspoon pepper
• ½ teaspoon Herbamare or salt

Instructions:
Preheat oven to 350ºF.
Cut around stem of peppers like you would cut a jack-o-lantern top, retaining the top with stem. Remove seeds carefully and wash and dry thoroughly.
Place peppers in an oven safe dish and arrange upright and put tops back on.
Bake at 350ºF for 30 minutes.
Meanwhile in a large non stick pan, saute onions, zucchini and carrots in vegetable broth for 5-6 minutes.
Stir in the rice and tomato paste and coat thoroughly.
Add parsley, dill, lemon juice, pepper and Herbamare (or salt) and stir to combine.
When peppers are ready, take out of oven and fill with stuffing.
Place tops back on peppers and bake for an extra 30-40 minutes until the peppers are soft.
Serve with additional wedges of lemon and dill for garnish if desired.

Kendra's Kitchen Recipe Blog 1

Hello Everyone!!! Welcome to my blog. I'm am so excited to start sharing with you some recipes that I have found and have tried and that are way healthier to eat!!! 
Every week I am going to post once a week my favorite meals and post pictures and the recipes to go along with it!!! So here's to eating healthy, exercising and living a long life!!!







Spaghetti and Meatballs

To start you will need these ingredients:
Turkey Meat (which ever brand you would like I used JennyO) How many lbs is up to you
Noodles (I used wheat noodles or shiratake noodles found @ Sprouts or Asian Market)
Cilantro (one bundle) 
Serrano Chiles (found at Mexican food stores for cheaper price) 6 of them
Onion (Red or White) One onion
Tomatoes (8-12) Depending on how big your family is
Tomatoe Paste ( 2 8oz jars)
Lemons (4)
Garlic Salt
Salt
Lawrys Seasoning Salt 
Black Pepper
Cholula (or your favorite hot sauce)
Crushed Red Peppers
optional: Grape Oil (or oil of preference) 

Preparation
Peel and chop your onion in to tinny pieces and split into to two and place and two separate bowls. Set aside. Then take your Serrano Peppers and cut the stem and but of the pepper and throw those pieces away then continue to chop the Serrano Pepper into tinny pieces. Put 75% of the Peppers into one bowl and the other 25% in other bowl. Set aside. Take the cilantro bundle and cut and discard the stems and them proceed to cut the leafs of the cilantro into fine pieces and place half in each bowl. Take the lemons and cut down the middle and proceed to put squeeze the lemons evenly into each bowl. Half in one bowl half in the other. No for the Garlic Slat, Salt, Black Pepper, Red Crushed Peppers and Lawrys Seasoning Salt go ahead and Salt and Pepper to your liking in each bowl. Keep in mind the bowl with the less peppers is for the meat balls.
To Make the Homemade Sauce
Get a decent sized sauce pan to put all the tomato you bought in it and fill with water and put on stove to boil. Once tomato skins starts to fall of and the tomatoes looks soft turn off burner. Take tongs to pull off the tomatoes skin and place skin to the side to discard. Once all tomatoes are skinned put the tomatoes in your at home blender and set aside. Then add your bowl that has more of the Serrano Peppers to the blender. Add the tomato paste to the blender. Start with on and add another if you like more of a thick consistency. Now blend the heck out of those ingredients!!! 
Meatballs
Add the turkey meat to the second bowl of ingredients and mix well. Once mixed well go ahead and roll into balls to the size of your choice. And set them aside. You can either bake them in the oven at 350 degrees or you can fry them in a sauce pan with grape oil and brown to your liking for both.
Oodles and Oodles of Noodles!!! 
Now for the noodles i used were wheat noodles any kind of your choice. I also heard about another healthier choice of noodles you can find at Sprouts or and Asian market, they're called shiratake noodles. So go ahead and boil those bad boys. Once boiled add the sauce and your cooked meatballs and enjoy!!!!
